Skill Capped recommends the following stat priority for Unholy Death Knight PvP:

Versatility is your most important stat for PvP. Focus on getting as much as you can, aiming for at least 20%. This will happen automatically through PvP gearing, as most items you use will have Versatility on them.

Haste reduces your GCD and increases your rune regeneration rate, allowing for more frequent ability usage and better resource management. It is crucial to hit your 20% Haste breakpoint before prioritizing other stats.

Mastery: Dreadblade increases the damage of your diseases and minions, making it valuable for Unholy's sustained pressure playstyle.

Critical Strike is your lowest priority stat but still provides value through increased burst potential.

The Devouring Banding seems to provide the best DPS increase at the moment, since it not only deals direct damage but also boosts secondary stats. You will need to craft this on a non-jewelry slot.
