Assassination Rogue Stat Priority
Versatility > Mastery > Haste > Critical Strike
You want to focus on getting as much Versatility as possible, even going past the softcap of 30%.
After that, you will prioritize Mastery. It now provides mathematically the biggest DPS increase. In the past, we wanted Haste due to Venomous Wounds giving us more Energy regeneration. But with the addition of Dashing Scoundrel, Energy generation is less of an issue, increasing the value of Mastery.

For trinkets, we recommend that you always use a Medallion. It has been mandatory in PvP for years, and will remain so in Dragonflight.
As for your second trinket, you should default to Insignia. Haste is one of our best stats, so this gives us the highest raw damage increase.
Emblem is a worthy defensive pick. If you find yourself dying over and over to a specific comp, this is a free defensive CD that can even scale the healing of Crimson Vial.
